How to make Hot Cocoa cookies
- The first step is to melt the chocolate and butter. Let it cool down.
- Grab a bowl, and add the flour, cocoa powder, baking powder, and salt. Whisk these ingredients together.
- Using a mixer, beat the sugar, eggs, and vanilla at low speed until you get a smooth consistency. Then add the dry ingredients and combine until smooth.
- Now that your mixture is ready, add the cooled chocolate and beat again until smooth.
- Put the dough in the refrigerator for at least 1 hour before you take on the next steps.
- Once your dough has had time to rest in the refrigerator, preheat the oven to 325* F. and cover 2 baking sheets with baking paper. Make identical dough balls. Spread the balls on a baking sheet at a small distance from each other, then lightly press the dough with your fingers on top.
- Bake the cookies for about 12 minutes.
- Now we move on to the other elements. Cut a large marshmallow in half. When the cookies are baked, take them out of the oven and press half of the marshmallows (cut side down) into the center of each cookie. Return the cookies to the oven and bake for another 2-3 minutes. Let the cookie pan cool for a few minutes, then transfer the cookies to cool completely.
- Prepare the icing for the cookies. To do this you need to mix all the ingredients in a medium bowl and whisk them together.
- Put a small amount of glaze on the top of each marshmallow and lightly smear it with the back of a spoon.
- Let the glaze set for about 30 minutes before serving.
- Enjoy your hot cocoa cookies!
Recipe notes and tips
This may seem like a very straightforward cookie recipe, aside from the extra bits for decoration. But that doesn’t mean to say there isn’t a few helpful hints to help you along the way. I wanted to share with you a few extra notes and tips to ensure that you can recreate these at home with ease.
- Take your time when it comes to mixing the dough. You want a smooth consistency with all of the ingredients combined.
- The main difficulty with this recipe would be creating the glaze and adding the marshmallow part to the cookie during the cooking process. Make sure you are careful when handling hot cookies to ensure you don’t burn yourself.
- Make sure that you give the cookies enough time to cool before you add the icing. Don’t rush this stage. Adding icing to hot cookies will cause the icing to melt and not hold its form.
- If children are helping, make sure they are supervised at all times when using a mixer and handling cookies that may not have had a chance to cool down.
Variations to try
Like with many recipes there will always be variations to try. Here are a few suggestions.
- If you don’t like a chocolate cookie then substitute cocoa for the extra flour. This way you can have a plain biscuit taste instead. You can still stick with adding the marshmallow and glaze.
- Use a different flavor for the glaze if you prefer. You could even add a mint flavor to it to create a mint chocolate flavor for the cookies. This could transform it to the next level.
- Add some red food coloring to the cookie dough and recreate these cookies around Valentine’s day.
- You could try cake mix hot chocolate cookies as a quick alternative
FAQs
Of course, there will always be questions that everyone might have when it comes to trying a few different recipes. With the Hot Chocolate Cocoa cookies recipe here are some of the common questions that you might have.
They are best stored in an air-tight container and in most cases, it would be ideal to store them in a cool dry place. You could store them like this for a few days.
The answer is yes! It is a great thing to have in the freezer and pull out when you want a quick sweet treat. Get to the stage where you have placed the cookie dough in the refrigerator to rest. Once you have done that transfer it to the freezer and then cut off the amount of cookie dough you need each time you fancy a batch.
You could, but you may fid that the taste and consistency is not the same because of the marshmallow. You could freeze them after cooking before adding the marshmallow, and then when you take them out of the freezer continue on with that stage of the recipe.
Enjoy your hot cocoa cookies.
