Patriotic Cupcakes: A Delicious, Fun Recipe for the Fourth of July

How to make the Red, White and Blue Cupcakes

Instructions:

To make the cupcakes, start by preheating your oven to 350 degrees F. Line a muffin tin with cupcake liners and set aside.

In a large bowl, with a hand or stand mixer, mix together the cake mix, water, oil, mayonnaise and egg whites on medium until well combined.

Separate the batter evenly between the 3-mixing bowls. Add the blue raspberry jello to one bowl and stir until combined. Add a few drops of the blue raspberry flavoring and mix again, add blue food coloring. Tint the second bowl of batter with red gel food coloring until desired color is reached. Leave the third bowl of batter plain.

Using a small spoon or ice cream scoop, fill each cupcake liner ¾ full with batter. Be sure to alternate the blue, white and then red into the lined muffin try, this will give you the patriotic effect.

Bake for 18-22 minutes or until a toothpick comes out clean when inserted into the center of the cupcakes. Allow to cool completely before frosting.

Directions For Frosting:

To make the frosting in a large mixing bowl use a hand or stand mixer, cream the butter together until light and fluffy then add the vanilla and the lemonade flavoring. Slowly add in the powdered sugar, one cup at a time, while continuing to beat on low speed. Mix in the heavy cream 1 tablespoon at a time. Once all of the powdered sugar has been added, turn up the speed to medium and mix until creamy and stiff peaks form.

As with the batter, divide the frosting into 3 bowls, tint one bowl of the frosting with red and the other bowl of frosting with the blue food coloring mix to desired shade. Leave the 3rd bowl of frosting plain.

Insert the larger piping bag into the large glass/mason jar. Using a frosting spreader, add a stripe of the red on one side and then another across from it. Repeat with the blue frosting. Carefully fill the bag with the white frosting. See the images as a guide if needed.

Before frosting your cupcakes, test the frosting by squeezing out a bit onto a plate until you see all the colors come out. Frost your cupcakes and finish off by adding a sprinkle of patriotic sprinkles on top.
