These Easter Mini Egg Brownies are so simple to make the kids will certainly want to help. They are chewy and fudgy and all the goodness we love from brownies with Cadbury mini Easter Eggs on them, to go with the Easter theme.

Lets get started on how to make these easy mini egg brownies, I really mean it when I say easy there are only a handful of steps, this mini egg brownie recipe might just be a special treat you can make over and over again at Easter time

Ingredients need to make these Cadbury mini egg brownies:

  • Brownie mix or you own favorite brownie recipe
  • 2 eggs (for the brownie mix)
  • ½ cup vegetable oil (for the brownie mix)
  • ¼ cup water (for the brownie mix)
  • Cadbury Mini Eggs candy, crushed and leave some whole
  • 2 ½ inch egg cookie cutter
  • 4 oz white chocolate, melted

Directions for these Easter Mini Egg Brownies:

Steps to make Easter Egg Brownies
  • First we need to preheat oven to 350, grease a 9 x 13″ brownie tray or line with parchment paper.
  • Prepare the brownie mix in large bowl, add the eggs, water and oil and mix with spatula or wooden spoon, do not over mix or they will not be chunky and gooey
  • Poor batter into lined tray and cook approx 25-35 minutes or until cooked to your liking
  • Allow brownies to cool completely.

  • Use the cookie cutter to cut out the egg shapes, you should get 12-14, or if you prefer to cut into squares then that is fine {less waste this way} arrange them on a baking sheet lined with parchment paper.

  • Add the Cadbury Mini Easter Eggs to a ziplock bag and use a meat tenderizer or rolling pin to gently crush them, leave some quite chunky for different textures.
  • Melt the white chocolate in microwave or over a double saucepan ( do not over melt it or it will go thick, then add the melted chocolate to a piping bag or a ziplock bag
  • Cut the very corner of the bag, then drizzle the melted chocolate in a back and forth motion over the brownie eggs.

  • Sprinkle crushed Cadbury Mini Eggs candy over each brownie.
